The second episode of Geek Eats arrives today! For this episode, the fandom focus is The Legend of Sleepy Hollow. Specifically, it is the Disney version of the story that can be found on GeekEats.net. - 2Sugar Pie Pumpkins
- 1lbGround Turkey
- 110 oz packageSliced Baby Bella Mushrooms
- 2clovesGarlic
- 1mediumYellow Onionchopped
- 1cupWild Rice
- 1quartchicken stockor other stock/water if preferred
- 115 oz cancorn
- 16 oz bagbaby spinach
- 4ozShredded Mozzarella Cheeseapproximately
- 1tspSaltor to taste
- 2tspPepperor to taste
- 2tspPaprika
- 1tspCayenne Pepperor to taste
- 1tspRed Pepper Flakesor to taste
- Preheat oven to 400 degrees.
- Cut pumpkins in half and clean out the insides. (Carve pumpkins if you’d like)
- Place pumpkins (without their lids) on an oiled pan and bake at 400 degrees for about 35 minutes, or until soft.
- Brown Ground Turkey with salt and pepper in a pan on the stove on medium.
- When browned, add onions, garlic, and mushrooms, then cook until soft.
- Add Chicken Broth and Wild Rice.
- Bring to a boil and then let simmer until wild rice is soft (time depends on rice) and most of the Chicken Broth has been absorbed.
- Add corn and spinach and mix.
- Stir occasionally while spinach wilts.
- Once the pumpkins and filling are completed fill each with the filling while the pumpkins are still on the pan.
- Put shredded mozzarella cheese on top of the filling on the inside of the top of the pumpkin.
- Return to oven until the cheese is melted/browned.
- Serve and enjoy!
Note: there will most likely be leftover filling for this recipe. You can use this in future stuffed pumpkins, stuffed squash, or even on baked potatoes.
